It's a Negima term. It's Latin (I think) for "Master".

But, the only people aiming to be Magister Magi's (Master Magician or something) are me and Leila. I dunno if Umi and Mortimer want to... But they are Magisters.

He isn't wrong on the fact that it wouldn't work for many reason ;

Kitty and Kagami wouldn't want to oppose Mortimer
Yoko wouldn't want to oppose Umi
jess wouldn't want to oppose William etc...

You can't make a topic without at least a reason behind what is happening.
And except from making it a "training" I don't think there is a lot of reason that could make this kind of situation happen, and even in the case of a training I doubt some character would cooperate.

That's exactly why it isn't a serious fight and isn't cannon. Because everyone has relations with each other (Will would never team up with Mortimer and Umi, etc...), you have to set it aside for this mission.

It's not cannon, we would never all be at the same place anyway without a plot device.

Also I have one question, the part where Umi is made of water mean that he can't be physically attacked?

He can't be physically attacked, but with ki he can be hurt.
